Friday Night Tipple - Spier 2016 Farm House Organic Rosé by La Rochelle Wine and Gourmet Tours

For our Friday night "Research" we opened the Spier 2016 Farm House Organic Rosé made from Shiraz.

Spier's wine Making notes:
The organically grown Shiraz grapes used in the Spier Farm House Organic Rosé were harvested by hand early in the morning in 8kg lug boxes in two intervals. This ensured we could utilise the natural higher acidity found in the grapes we harvested at the beginning, as well as the fuller complexity of grapes harvested in the latter half of the harvest period. Hand sorting followed pre-cooling. A low-intervention approach was used throughout the winemaking process. The natural yeast flora of the grapes completed the fermentation in 300-400L French barrels in a temperature-controlled environment. Throughout fermentation the barrels went through strict barrel selection so that only the best ones were chosen to go into the final product.
